And the thing that makes it go up is - what - some guy pulling on a rope? So small stuff only? A pulley system with a 6 to 1 mechanical advantage is one of the standard setups. The counterweight essentially reduces your load by half. So one guy pulling on a rope can lift 1200kg with 100kg of force (minus a few % loss to friction and such if you want to get into the nitty gritty.) Higher mechanical advantages are possible, the drawback is that the rope/cable has to travel that much farther as well. So for example, with a 6 to 1 pulley set up, you can lift six times as much weight, but you have to pull 6m of rope for every 1m of lift.

Thinking if they want to put a donkey out back on a turn table (or some slaves though the PC's aren't big on slavery) they can have a functioning elevator. The stable and such would need to be added.
I mean you could have some guy hauling the rope but thinking the turn table would take up less room. Just need someone clever to build it. Or, rely on NPC's and see why civilization often fails.

To confirm: were there previously crys-powered elevators in gothic?
If not, we would have removed it from the plans early on, and rely on stairs if that's what's standard.

Yes there were. The whole society was based on crys. Which, for some reason fortunately unknown to them, has stopped working.

You can set it up so that the hauling rope passes through the ceiling and floor of the elevator cab. That way you have the option of anyone just operating it themselves, or hire a strong guy in a silly uniform to stand there all day.
