Q: Do we have to keep track of money?
A: Probably several different types - assuming you want money.
Q: If we make a business, do we have to figure out a business plan?
A: Yes - but playing the campaign in no way requires you to build a business. If you do so, it means you want to make a business plan. It will be less detailed than in real life. Or, you will use it as a money sink. "We've got an extra couple million dollars - can we buy a tavern with that?" Probably a pretty nice one. But if the PC's are wanting to use it for something other than a money sink, yeah. You'll be playing a game called "Business and Bureaucrats" for a bit.
More Q&A if I can think of any.

And you will never want to leave an NPC in charge of your business. No matter how "competent" they are, there is always a daily fumble chance that they will burn it to the ground.

Note - also I will absolutely not care about any sums of money that I consider 'petty'.
If someone needs a $5 set of gloves, I would only care about that if the party is broke.
In other words, the more rich the party is, the greater their buying power without really going into their capital.
Totally unfair but it does seem to work like that in real life as well.

That makes sense to me and eliminates a crapton of bookkeeping.

Some things I would keep track of but chances are you won't need to keep track of them all that hard.
For example, you go to China. You do stuff there. When you're leaving China you say "How much Renminbi do I have left?" and note it down. If you ever go back to China, you don't have to go through the whole 'Oh, I'm now in China and don't have any of the local currency' crap.
Except that possessions (until the players catch on to my little traps) will be very fleeting. After they catch on then keeping somme Renminbi might actually pay off. So to speak.
But yeah - I was looking at price lists for <redacted> and said "Holy crap, I don't give a shit how much a candle costs nor if the players actually deduct the money for it! I do care if they try to buy a <redacted> because then money = power and it matters very much.
