To incoming damage presumably? Stacks with armor presumably?

I take it "casting time: reaction to when you get hit" is out of the question? Just wondering because 10 MP is quite an investment when you don't even know if you're going to be hit. Or maybe make the duration a bit longer?

Actually, we could make it a 'smart defense'.
If the caster chooses to use it, (presumably after hearing the damage) it goes for the whole round.
Disadvantages - no moving faster than say a walk, only counters physical damage (pretty much anything shot or stabbed - magic swords do count but not cast spells; no one defense should be the ultimate) and using it's opposite flavor on it (in this case water) gives a bump to the damage.
Good things, bad things.

Meaning you can cast it well ahead of time, but then you have to deal with the bad stuff until you "discharge" it? Ten MP still seems like a lot.

It's an entire round of immunity vs physical stuff.

Two to four bumps is desirable, it will reduce a heavy pistol's damage (d10) to that of a punch(d3). But it's hardly immunity, because it doesn't reduce a punch at all. A d3 is the minimum (unless "special"). If this is one of those "special" situations, then we should mention it in the spell.
Perhaps: "Description: Two bumps down on the damage track in addition to any armor that you are wearing. Normally bumps down on the damage track end at a minimum of d3, but this spell is one of the exceptions that can reduce your incoming damage from d3 to zero."

I'm wanting d3 damage to be the min, even for this spell.
"It's an entire round of immunity vs physical stuff." Correct to 'greatly reduced damage'.
Super if you're getting shot with rocket launchers, sucky if you're getting pimped slapped.
That's fine.

Casting time: Instant (on your turn) Range: Self Duration: 1 round MP cost: 10 MP
Description: Two additional bumps down on the damage track toward any damage that isn't spells. Stacks with armor and magic armor. Minimum damage is d3. This is a 'smart defense' that can be called after hearing damage but if it isn't used during the combat the spell expires. Once this spell is cast - until it is used up - the caster may not move faster than a walk.
Thoughts?

So, wait. Let me see if I understand this.
You cast the spell. You get hit. You take damage. You decide to use its effect. Damage is rerolled 2 bumps down to a minimum of d3? Or do you have to declare it before damage is rolled?
Would it not be better to cast the spell and have it last until end of combat? That's what it sounds like you're going for from the description but the "duration" indicates otherwise. This is what I think you mean:

Casting time: Instant (on your turn) Range: Self Duration: Combat or until used up MP cost: 10 MP
Description: Two additional bumps down on the damage track toward any damage that isn't spells. Stacks with armor and magic armor. Minimum damage is d3. This is a 'smart defense' that can be called after hearing damage but if it isn't used during the combat the spell expires. You'd declare it before damage is rolled. Otherwise, we don't know which damage dice to roll.
Here's what's in my mind:
Player casts the spell, now they're stuck walking around for the combat.
Bad guy hits the player for d12 damage. Stone stance! Says the player. Now it's d8 (assuming the player is naked).
Any other bad guys who also damage the player (not with spells but everything else) during the round also have the two down bump.
Basically it's good against one NPC unless the player is so 'lucky' as to have multiple people/creatures attacking them during the same round.
Your 'till used up' sounds fine.

Casting time: Instant (on your turn) Range: Self Duration: Combat or until used up MP cost: 10 MP
Description: While this spell is active and after you are hit, you may declare to use its effect. 2 additional bumps down on the damage track toward any damage that isn't spells. Stacks with armor and magic armor. Minimum damage is d3. The effect lasts for the entire round, meaning if you are hit from multiple sources, it applies to each of them. Once this spell is cast - until it is used up - the caster may not move faster than a walk.
That should clear it up.
