I'm no expert on how things grow and in what conditions so maybe this is something that you could add to the spell yourself. I was just imagining it as a simple: you plant whatever in the right environment and the thing doesn't take more than x amount of time to grow fully, after which you can do with it whatever you want.
All the spell is supposed to do is reduce the time needed for something to grow. Everything else is completely normal/unaffected. If growing a tree in one month instead of 4 months would mean it needs to be planted at a certain time or whatever, then fine. I have no idea about any of that sort of stuff. That sounds like Botany skills would be involved or Farming or whatever.
How would you word the spell? What are your thoughts?

I'm trying to not be "stumped" in rectifying in a simple manner that fully grown is different than harvest-able. A fully grown apple tree in winter/spring/summer is not ready to be harvested. A not fully grown apple tree will still produce a few apples in fall. Every yummy, stinking plant has their own rules.
Scenario of my understanding of how it is written if "able to be harvested" is removed from the current description and we only have the fully mature aspect: I cast an up-to-12-mp-spell on plant/seed in a place it could grow, the time-lapse style growing lasts for as long as the spell indicates, but the plant matches natural seasonal growing conditions. I cast it on my apple seed in winter, it grows like a winter sapling bigger until it is fully grown and still in winter mode. Now I have cool place for a tree fort, but no apples; it's a regular tree. Sorry, no apples for you, come back and try again so when the spell ends it will be fall, know botany better, as well as the length of each zones' growing seasons If that's where we want to go with it, we can remove "able to harvested" and add "It accelerates the plant's natural growth rate and when the spell is completed the plant will be fully mature and in harmony with the area's seasons." The plants would have no special properties.
If the purpose of the spell is "I want delicious vegan food at the end of the duration of this spell"; this plant is most likely going have temporary special properties in order to be harvested. I'm salivating and think "fully grown and able to be harvested (once or for a length of time, whatever details are hammered) before it becomes in harmony with the area's seasons". Much more useful and don't need to know each plant and zone, but I count that as special properties since you could have harvests in winter once. If you aren't there to check on it in four months or whenever, someone else might harvest and you don't get the fruit of your labor.
So, are we okay with special harvests so that we'd get food without making growth charts?

You could have another spell in there which makes the fully grown plant 'ready for harvest' for things like apple trees that keep producing stuff.

Right. I see what you're saying now.
I'm thinking have one branch that is just a simple "the plant grows fully" and that's it. No special harvesting properties. Then you can have another branch which accelerates the growth of any fruits, berries etc that the plant may create.
So one would be to accelerate the growth of the plant itself and the other would be for when you already have a fully grown plant. How does that sound?
