Was working on coming up with a (new) list on specifically what is allowed; if you have ideas post them.
Here's what I have thus far:
Allowed changes (each is a different roll): Hair color; eye color; claws, gills. Alter smell a bit (to a different human but not a specific one). Alter height very slightly. Alter weight very slightly. Toughen skin (counts as armor).

Sharpened teeth (new skill: Bite, d4 damage) Change fingerprints (fingerprints become random human fingerprints) Nictitating membrane (aka third eyelid, some animals have this as an extra layer of protection)

I like the first two - not sure what the practical game effects of the third one is as I don't actually have that level of detail in the damage.

Note that the mess up Holmes had with his feet still makes me smile.

Gain/remove freckles (congrats, you know have/don't have freckles) Teeth Alignment (have nicely aligned teeth or make it so you have an overbite/underbite) Remove/gain ear piercings (for when you don't want to go through the pain of getting your ear pierced, or for when you want to fill up the hole from a piercing)
I'll keep posting more as they come to me.

Larger/smaller penis (don't act like nobody's thought about this already) Gain/remove minor facial wrinkles (for when you want to look younger/older) Change lips colour (like lipstick, except it's your actual lips) Change fingernail/toenail colour (like painting your nails, except it's your actual nails)

I can sum that up with 'and other minor shit the GM may or may not allow. Consult GM.'

One thing that confuses me about this ability is the whole "you must spend 2 days learning your new form". What exactly is involved in doing so during those two days? You mentioned that no rolls were required – only time.
I feel like this goes against your mantra of keeping things simple and not having players keeping track of several things. Having to keep track of what kind of simple forms you can shape shift into seems like a chore. Why not just let them shape shift into whatever reasonable form they want without having to spend those 2 days learning it? If it's something very specific, then maybe you can have them rolling at a penalty or something.
But, if you insist on having the training days, is it okay for a player to say "during the next 7 days I will be learning 3 new shape shift forms, on top of all the other things I normally do"?

Yes - the player can say "I spend a couple days working on claws".
There is a later power that allows people to get around planning.
